Blueberry Waffle Breakfast

Sometimes, we just have to enjoy a little sweetness at breakfast time. What better way to do so than with a healthy waffle breakfast? This is probably one of the easiest breakfasts to prepare, and can be a great “before work” breakfast.

you’ll need:

2-4 gluten and wheat free frozen waffles (whole grain or wheat will work just fine too, I used the Kashi brand  blueberry frozen waffles)

1/2 cup of organic non-fat yogurt (plain soy will work as well if you wish to veganize it)

1/4 cup fresh blueberries

1/4 cup agave maple syrup

1 tsp butter (to veganize use your favorite version of Earth Balance butter–if you’re trying to cut back on soy there’s a great soy free version of Earth Balance)

simply toast the waffles,  garnish with the yogurt and blueberries, lightly drizzle the syrup on top of the waffles et voila!

estimated calories and fat for the 2 waffle version:

300 calories, 8 grams fat.

**serve with a cup of coffee or if you’re feeling super healthy, have with nutrient rich yerba mate**
